At EVERGREEN CUISINE, we sculpt our menu based on the freshest, most seasonable ingredients available while being mindful of our environment.

Hors D'oeuvres: (Prices from $1.49 to $1.99 per piece**)

- Smoked Salmon Roll-Ups: Stuffed with cream and mascarpone cheeses with just a hint of lemon, dill and chives.

- BLT Bites: Cherry tomatoes stuffed with a delicious, bacon mixture. All the flavors of a classic BLT in one luscious bite.

- Barbecue Crab on a Corn Blini: Jumbo lump crab meat set atop a corn blini and finished with our house-made sweet & spicy barbecue sauce and cilantro crème fraîche.

- Balsamic-Heirloom Tomato Bruschetta: Sweet heirloom tomatoes with balsamic vinegar, fresh basil, shallots and Parmesean Reggiano atop a crustini.

- Mini Southwestern Crab Cakes: Our house-made crab cakes cooked to crispy perfection and topped with mango salsa and cilantro sour cream.

- Carne Asada Tostada Bites: Topped with our fresh guacamole and salsa fresca, both made in house.

Appetizers: (Prices from ($5.99 to $9.99 per item**)

- Barbecue Seafood Napoleon: Grilled shrimp and jumbo lump crabmeat sandwiched on a sweet corn bread cake with our house-made sweet & spicy barbecue sauce, topped with cilantro sour cream.

- Crab Cakes: Our own sweet and slightly spicy crab cakes topped with mango salsa and a drizzle of Southwestern aioli.

- Roasted Vegetable Napoleon: Roasted portabella mushrooms, zucchini and red bell pepper sandwiched between puff pastry with mozzarella cheese, topped with our house-made tomato sauce.

- Scallop & Shrimp Sambuca: Bay scallops and shrimp with carrots, celery and fennel, served on top of jasmine rice and topped with a Sambuca-cream sauce.

Salads:(Prices from $3.99 to $7.99 per item**)

- Classic Caesar: Romaine lettuce with our own Caesar dressing, house-made croutons, and grated Parmesean Reggiano.

- Southwestern Caesar: Romaine lettuce with our own southwestern Caesar dressing, sliced avocado and crispy tortilla strips.

- Cobb: Green leaf lettuce with diced turkey, chopped bacon, hard-boiled egg, sliced avocado and crumbled Gorgonzola.

- Pear, Walnut & Gorgonzola: Fresh spinach leaves with pear slices, roasted walnuts, Gorgonzola cheese and a honey-mustard vinaigrette.

Soups: (Prices from $4.99 to $8.99 per item**)

- Gazpacho: A refreshing, chilled, yet slightly spicy classic Spanish-style tomato soup.

- Chilled Tomato Basil: A flavorful version of an Italian classic. Perfect for a sunny afternoon affair.

- Minestrone: Italian-style vegetable soup with macaroni and cannellini beans.

- Steakhouse Soup: Tender steak, potatoes, tomatoes and vegetables. All the flavors of your favorite steakhouse in one bowl.

- New England Style Clam Chowder: All the comfort-food goodness you expect from an Eastern Seaboard favorite.

Sandwiches: (Prices from $5.99 to $7.99 per item**)

- Polynesian Pulled Pork: Kalua-style pork, grilled pineapple and Polynesian barbecue sauce on a Hawaiian-style sweet bread roll.

- Fresh Tuna Salad: Definitely not from a can. Fresh albacore tuna salad, heirloom tomato slices and red leaf lettuce on our house-made foccacia.

- Southwestern Chicken Salad: Free-range chicken breast grilled and combined with green onions, jalapenos and cilantro on a baguette with sliced avocado, tomatoes and red leaf lettuce.

- Roast Beef: Thinly sliced beef roasted in house with horseradish cream sauce, crispy onions, sliced tomatoes and red leaf lettuce on a Parker House roll.

- Butternut-Sage: Butternut squash, sliced and roasted with a sage aioli, arugula, Jarlsberg and goat cheeses, served on grilled rosemary bread.

- Roasted Veggie: Roasted portabella mushrooms, zucchini and red bell peppers with grilled onions and goat cheese on our house-made foccacia.

Entrees:(Prices from $18.99 to $34.99 per item**)

- Beef Tenderloin en Croûte: Seasoned filet mignon and mushroom duxelles wrapped in puff pastry. Served with roasted garlic whipped potatoes, sauteed seasonal vegetables and a rosemary-red wine reduction sauce.

- Grilled New York Strip Steak: Served with garlic & rosemary roasted potatoes, sautéed seasonal vegetables and a port reduction sauce.

- Kalua Style Pork: A taste of the islands. Sweet and smoky shredded pork served with grilled pineapple, coconut rice and sautéed seasonal vegetables.

- Barbecue Pork Tenderloin: Marinated and grilled pork tenderloin topped with our house-made barbecue sauce and served with spiced apples, gratin potatoes and sautéed seasonal vegetables.

- Southwestern Grilled Chicken: A seasoned and grilled free-range chicken breast. Served with roasted-garlic whipped potatoes, sautéed seasonal vegetables and a Southwestern cream sauce.

- Roasted Airline Chicken Breast: A free-range chicken breast seasoned and roasted, served with herb rice pilaf, sautéed seasonal vegetables and a champagne-cream sauce.

- Pan Roasted Halibut: Served with herb rice pilaf, sautéed seasonal vegetables and a smoked pepper cream sauce.

- Pan Roasted Salmon: Pacific salmon filet served with herb rice pilaf, sautéed seasonal vegetables and a dill cream sauce.

- Lasagna: Our house-made lasagna with or without meat, topped with our own tomato sauce.

- Eggplant Lasagna: Vegetarian and gluten free. Roasted eggplant slices replace the noodles but you won't notice the difference.
